Ingredientes

  • ingredients (serves 2)
  • 100 g of mixed watercress, baby spinach and rocket salad, washed and drained
  • 1 sheet of sushi nori, finely snipped into strips
  • 1/2 cucumber, thinly sliced
  • 180 g smoked salmon, sliced
  • 2 spring onions, trimmed and sliced
  •  
  • for the miso dressing
  • 2 tsp grated fresh ginger
  • 1/2 tsp brown miso paste
  • 1 tsp tamari or reduced salt soy sauce
  • 2 tbsp mirin
  • 2 pinches of caster sugar
  • 2 tbsp rapeseed oil
  • 3 to 4 tbsp lemon juice, to taste

  • method
  • Whisk the ingredients for the dressing in a bowl. Chill the dressing until needed.
  • Arrange the salad leaves, snipped nori, cucumber and salmon on 2 plates.
  • Spoon the dressing over the salad and garnish with the sliced spring onions.
